Trending Wine Varietals in 2025

Wine culture in 2025 isn’t about dusty cellars or rigid rules, it’s about flavour, attitude, and a touch of chaos...Which we are happy to be contributing to at Melbourne Winery. The trending wine varietals right now aren’t necessarily the oldest, rarest, or Frenchest, but they’re surprising.

GAMAY

From niche to essential, Gamay is the red for people who say they don’t like reds. It’s juicy, chillable, and doesn’t take itself too seriously, making it perfect for all seasons. It’s trending as it’s super versatile, and fits into the low-intervention, small batch movement (which greenies are loving!).

Taste Check: Think juicy fruits like strawberries, with a touch of spice.

A juicy Gamay is coming to the menu at Melbourne Winery very soon. If you sign up to recieve communications from us, then you’ll be the first to sip!

ORANGE WINE

Orange wine has officially entered the chat, another low intervention wine. It’s bold in hue and unapologetically expressive, its the wine equivalent of Margot Robbie, think charasmatic, mysterious, and super photogentic.

Taste check: Apricot skin, tea leaves, citrus zest, and a bit of ‘what is that’, in the best way possible.

She’s natural, textured, and an IG story fave (guilty). Come summer in Australia, Melbourne Winery will have one of their own…

FIANO

Originally from Southern Italy, Fiano has quietly become Australia’s go-to white for those bored of the same old Savvy B. It thrives in our warm climates and brings texture, complexity, and a touch of elegance to every sip.

Fiano is quietly confident. It doesn’t need to shout to be the most interesting glass in the room. With creamy texture, citrus curves, and a nutty undercurrent, it’s like an Aperol drinker who just graduated to grown-up wine…with taste.

Taste check: Lemon curd, toasted almond, pear, and a little smoky.

We’re whispering it now, but Fiano will be everywhere soon. And yes, we’re into it (shock).

GRUNER VELTLINER

Hailing from Austria, Grüner Veltliner is Europe’s crisp, peppery answer to Sauvignon Blanc. But with more attitude and a cleaner finish. It’s been thriving in Australia’s cooler regions like the Adelaide Hills.

Grüner is for the palate that wants clarity. It’s cool, peppery, and a bit intellectual, like your friend you wished would shut up.

Taste check: Lime zest, white pepper, fennel.

It’s the quiet achiever with a cult following.

NERO D'AVOLA

Born in Sicily and now living its best life in places like McLaren Vale and the Riverland. It’s structured, spicy, and surprisingly versatile.

Nero is what happens when a Mediterranean red gets an Australian edge. Ripe, rich, and occasionally peppery, it’s intense without being overwhelming. If this wine were a person, it would probably be a Scorpio.

Taste check: Dark cherry, spice, sun-dried tomato, and a warm, earthy feels.

Where to From Here?

If these wines are anything to go by, the future of wine is lighter, weirder, and way more interesting. And yes, Melbourne Winery has a few of them coming soon…

So if you’re curious, thirsty, or just in need of something new check out our cellar door. Who knows you might like what you see and book a table to have dinner with us too!
