VINEYARD TO CELLAR
These are the many tasks of a vineyard manager or viticulturist during the autumn season.
The Harvest:
Autumn is synonymous with harvest season in the vineyard, a time when months of careful cultivation culminate in the gathering of ripe grapes:
- Timing is Key:
Winemakers monitor grape maturity closely, tasting berries and assessing sugar levels to determine the optimal moment for harvest. This ensures grapes exhibit ideal flavours and balanced acidity crucial for quality wines. - Hand-Picking vs. Machine Harvesting:
Depending on the vineyard’s size and grape variety, grapes may be hand-picked for precision and selective harvesting or machine-harvested for efficiency in larger areas. - Grape Sorting:
Upon harvest, grapes are meticulously sorted to remove any damaged or underripe fruit, ensuring only the best grapes make it to the winery.
Post-Harvest:
Once harvested, the winemaking process begins, where the focus shifts from vineyard to cellar:
- Crushing and Pressing:
Grapes are gently crushed to release their juice, which is then pressed to separate skins and seeds from the juice.
- Fermentation:
Yeast is added to the juice to initiate fermentation, where sugars are converted into alcohol. Temperature control during this process preserves delicate flavours and aromas. - Aging:
Some wines, particularly reds and premium whites, undergo aging in oak barrels or stainless steel tanks. This process enhances complexity and adds depth to the final product. - Blending and Bottling:
Winemakers blend different batches to achieve desired flavor profiles before the wine is clarified, stabilized, and bottled for aging or immediate consumption.
