Wine on it's own is one experience. Wine after chocolate is another entirely. Here's why.
WINE & CHOCOLATE
They say that a bit of chocolate can fix almost anything. Usually I think they mean a heartbreak or a full-blown crash out, but it turns out that chocolate has a pretty dramatic effect on wine too.
One sip of wine on its own tells you one story.
Add a bite of chocolate, sip again, and suddenly it’s a completely different narrator. One that is richer, smoother, sometimes louder, occasionally a little unhinged.
Nothing in the wine changed.
But everything in your mouth did!

THE SCIENCE
I am no scientist, but hear me out.
Chocolate coats your mouth in fat and sugar, which tones down bitterness and turns up the fruit in the wine. By the time you take another sip, you’re basically tasting a different version of the same glass.
Which is why a wine that felt sharp five seconds ago can suddenly taste plush and expensive… or, if the pairing is off, like it quietly packed up and left.
Think about fruit and chocolate, they always pair well, so it’s really not all that different… just these grapes have turned into wine.
WHEN IT WORKS VS DOESN'T
A great pairing makes both the wine and chocolate taste better.
A bad pairing makes you wonder if one of them was always terrible and you just didn’t notice before.Â
Too sweet chocolate + dry wine = sharp, thin, slightly aggressive winey taste.
Very bitter chocolate + tannic red = mouth drying mess (We made this mistake in trials).
